Joseph KARAM, PhD student in Management, Lyon University, Jean Moulin Lyon 3 University, iaelyon School of Management, Magellan research center.

After 25 years in the business world and the development of a restaurant industry group in Lebanon and the Middle-East, I came back to France in January 2020. I had the opportunity to share my passion as a teacher in hotel schools, on the themes of management and development. Since August 2021, I am in charge of the Bachelor in International Restaurant industry management and of the three specializations in the fourth year at the Paul Bocuse Institute. 

My academic background started in 1995 at the Paul Bocuse Institute and then at iaelyon with a Master’s degree in Studies and Research in Management with a thesis on the impact of restrictive laws on individual, collective and collaborative skills and the impact of local management in collective catering. 
I am currently pursuing a PhD, under the supervision of Olivier Bachelard and Didier Vinot, on “the progressive structuring of individual, collective and collaborative skills in meta-organizations, due to the changes set by the Egalim and Agec laws”.

Thanks to these laws we are moving towards atypical skills, that will fill a shortage of skills, created by these changes, by a progressive structuring of skills at all levels, by a reflexive approach for the players in the field and an attractiveness of collective catering, that plays an important role in the societal environment.
